Cupcake Madness

Happy Monday! Hope everyone had a great weekend! Today is my first day back at school after an amazing 10 day break! It wasn't long enough of course. :) And HAPPY MOTHERS DAY to all you moms out there!

Now lets get down to business. At my church we love to eat I mean LOVE to eat. We have potlucks all the time and I usually bring cake-pops or something but this past Sunday I felt that since it was Mother's Day we needed something a little brighter and a little more messy. I've made these cupcakes before and just showed pictures and people were asking if I were selling them so I decided that I should surprise everyone and bring them. You've seen them on Pinterest: 
I absolutely love these little cupcakes! They are so cute and I think they are a total mind blow...you think that when you bite into them they are going to taste like watermelon or something candy flavored but they're not!

Tools used:
Betty Crocker Super Moist Yellow Cake Mix
Neon food coloring
Frosting Creations frosting
Frosting Creations addition in Mint Chocolate
Nestle semi-sweet mini morsel chocolate chips

Make your batter following directions but before moving it to your pan add in the neon pink food coloring
and then add a good handful of chocolate chips! Pour into your cupcake cups or how ever you want to do it! Then bake like normal.
For the icing mix in the add-in which I used Mint Chocolate then add some neon green food coloring 
When the cupcakes are done and cooled you can start icing them! My favorite method for icing is just to use a ziplock bag put my icing in the bag and cut the tip off of it and ICE! 
Once all cupcakes are iced add a few chocolate chips to the top depending on how much you like chocolate. 
and TADA!!! They are soo extremely yummy! And everyone loves them!!! Of course my icing skills aren't of master level like the pinterest ones but I will get there!! But anyways those are my cupcakes! Hope yall enjoyed the Pin for this week!!

Chocolate Covered

Helloooo friends!! So it's time to show you my first Pinterest creation. My friend Hanna and I got the bright idea that we wanted to make something to snack on so what do we turn to?? Pinterest of course. And what do we decide to make?!

 CHOCOLATE COVERED BACON!

Yes my friends....we did it....We made chocolate covered bacon. 
The picture above is the famous chocolate covered bacon that you see on Pinterest. So heres how we TRIED to achieve that. 


Items used:
Flat cast iron skillet
2 metal spatulas
about 6 strips of bacon cut in half
about 3/4 of a cup of Hershey's semi sweet mini chocolate chips

Process:
We began by cooking the bacon in the cast iron skillet. Which doesn't seem like it would be a lot of hard work but trust me it was. I am not good at cooking bacon to be completely honest, so when I do cook it it comes out looking like a burnt ball of what appears to be bacon. With that in mind I decided to use a spatula to help it stay flat. BEST IDEA EVER! Except for the part where we both had to stand there and wait for about two half strips of bacon to cook while holding them flat with a spatula. But hey whatever gets the job done right?
So with the bacon done, it was time to melt the chocolate. I most definitely let Hanna have FULL control over this process because I always burn it! (Don't assume I'm a bad cook, I just know what I can cook and what I can't). She did a great job using the old bowl over boiling water trick, while I stood there patiently trying not to eat the crispy bacon that was waiting nearby. 
Once the chocolate was finally melted it was time to dip! Now as you see in the picture above their chocolate is all smooth and pretty looking. As I tried to "dip" the first piece it came out looking NOTHING like that. So we decided to "drizzle" chocolate on them... okay maybe I don't get the whole concept of "drizzling" anything but I plan on not drizzling again for a while. It was a mess! I would get a good drizzle going then BAM out of nowhere a big glob of chocolate would fall on my bacon. But I wouldn't let that keep me down! We kept dipping, drizzling, painting, rolling the bacon in the chocolate. And here is the end result:
Our beautifully hand crafted chocolate covered bacon! Does not look anything like the picture! As long as it tastes good right! We then stuck them in the freezer for like 5 minutes to harden a bit, told Hanna's husband and Nic (nicole) that they tasted horrible so we threw them all away and watched their faces as they looked like they just got told Santa isn't real. But once they were finished we pulled them out, looked at eachother like here goes nothin and took a bite. It was like fireworks going off in your mouth! Salty and crispy but yet sweet and creamy. The best snack ever! Well unless you're diabetic, allergic to chocolate, a vegetarian, or any other crazy thing that could keep you from enjoying this chocolate covered bliss. 

The next time we make this we are going to try peppered bacon and maple bacon. Maybe even a little bit of peanut butter on them. I'm so excited!

Secretly I think Pinterest has cloned Martha Stewart and Rachel Ray and have them locked in a factory somewhere to produce these beautiful foods and remarkable crafts. But hey, what's the harm in trying to make these things happen right?

Well hello there! Lol. My name is Chelsea! I am 23 and I am currently a full-time student enrolled to become a Cosmetology Instructor. I love doing hair but my passion is teaching. I love teaching people new things and watching the light bulb turn on!
I am very sarcastic, think I'm very funny even when others don't. I believe you have to laugh at yourself to stay sane. My partner Nicole and I have been together for almost 3 years...We are like days away from our 3 year mark. We have a crazy life but i wouldn't have it any other way. I have firm faith in God as he has carried me when I thought there was no way I could go on. My style is kind of odd...when I say odd I mean I'll wear whatever is clean. I'm not picky. I'm sweet but outspoken, do not handle stupid very well, was raised to voice my opinion, and know who to shoot a gun! (Was raised in the country in Texas what do you expect?!) Anyways I'm sure your sitting there thinking okay lady, come on...get this road on the show (I know it's show on the road but I strive on being different :).

As I said above my blog is going to consist on me and maybe an occasional friend finding and making things from Pinterest just to see if we can do it! :)
